By Kamikawa Taisetsu Sake Brewery, Hokkaido

A "regional revitalization brewery" supported by its community and rooted in the region.

About

In 2021, Kamikawa Taisetsu Sake Brewery founded Goryo no Kura, the first sake brewery in Hakodate in 54 years. It stands on the grounds of the former Kameo Elementary and Junior High School in Kameo-cho (亀尾町), a mountain area in eastern Hakodate blessed with water and rice. Hakodate welcomes many visitors every year, has many star-rated restaurants, and ranks high in municipal attractiveness rankings. The brewery aims to make local sake loved by the community, using locally grown sake rice and local water. It is also working with the National Institute of Technology, Hakodate College on research in fermentation and brewing science, and on training the next generation of people for the sake industry. The brewery is easy to reach, about 15 minutes by car from Hakodate Airport and close to the Jomon archaeological sites of the Minamikayabe area and the Trappistine Monastery. It makes sake designed to pair well with Hakodate's fine local food, especially seafood, and plans to expand its brewery tours and directly operated shop so that more people can visit.
