Aiyama
愛山あいやまAiyama is a sake rice (sakamai) grown mainly in Hyogo Prefecture. It is a late-maturing variety that takes a long time to ripen, and it is considered difficult to cultivate. Aiyama has Yamada Nishiki and Omachi as its grandparent varieties, and it inherits characteristics of both. It is known for a full-bodied flavor and a rich aroma. Because the rice contains plenty of umami components, the sake brewed from it is rich yet leaves a clean aftertaste, resulting in a satisfying drink. It is known as a rice highly regarded by sake enthusiasts and breweries alike.
