Amakuchi (sweet)

甘口あまくち
Amakuchi (sweet) refers to a style of sake with a noticeable sweetness. It is generally said that sake begins to taste sweet when it contains 3% or more sugar, and in terms of sake meter value (SMV) it is expressed as a negative number. However, the sweetness of sake is influenced not only by the amount of sugar but also by the interaction of many components, such as amino acids and acids. In particular, when acidity is low, the sweetness can stand out more. Taking the overall balance of flavor into account is the key to understanding sweet sake.
