Boiling point
沸点ふってんBoiling point is the temperature at which a liquid changes into a gas and boils. When a liquid reaches its boiling point, the vapor pressure inside the liquid becomes equal to the surrounding atmospheric pressure, and the liquid begins to turn rapidly into a gas. For example, the boiling point of water is 100°C at a pressure of 1 atmosphere, but boiling point also plays an important role in the production and drinking of sake. When heating sake, understanding the boiling point makes it possible to manage the temperature appropriately without spoiling its flavor or aroma. The alcohol content of sake is roughly 15 to 20%, and because the boiling point of alcohol is lower than that of water, particular care is needed when heating it.
