Chemical oxygen demand (COD)
化学的酸素要求量かがくてきさんそようきゅうりょうChemical oxygen demand (COD) is an indicator of how much oxygen is required to break down the organic matter contained in water. In sake production, it is an important figure for gauging the amount of organic matter generated by raw materials and during the brewing process. It allows breweries to manage water quality and improve their cleaning processes, helping to ensure the production of good sake. A high COD value may adversely affect both the environment and the quality of the sake, so appropriate management is required.
