Chogo (blending)

調合ちょうごう
Chogo (blending) is the technique of mixing several sakes together to produce a sake with a target quality or flavor profile. By combining different types of sake, brewers can adjust the balance of aroma and taste and bring out a particular flavor or sense of body. The brewer carries out the blending while taking into account the components and characteristics of each sake, pursuing the distinctive character of the final product. The process is also used to keep flavor consistent and to create new flavors. Blended sake often offers a richer experience than any of its components could provide on their own.
