Gokumi (richness and depth of flavor)

ゴク味ごくみ
Gokumi refers to the sense of fullness in the taste of sake that arises when rich flavors are perceived and those flavors are in harmony. It is also called "koku" (body or richness). It is not simply a matter of sweetness or sourness: umami, bitterness, aroma, and other elements come together as one to give the sake a deep, layered taste. Gokumi gives the drinker a feeling of satisfaction and is regarded as an especially important element in pairing sake with food. Many high-quality sake show a clear sense of gokumi, and it is greatly influenced by the brewer's skill and the choice of ingredients.
