Hensei (denaturation)

変性へんせい
Hensei (変性) refers to a change in the properties or structure of a substance. In sake brewing, it relates mainly to the denaturation of yeast and proteins. As fermentation progresses during brewing, yeast produces alcohol, and changes in temperature and pH in the process can alter the structure and function of the yeast and other components. This denaturation can affect the final taste, including flavor, aroma, and mouthfeel, so brewers need to manage the process carefully.
