Highly polished rice (Koseihakumai)
高精白米こうせいはくまいKoseihakumai (highly polished rice) refers to sake rice that has been milled to a high degree, meaning a large part of the grain's outer surface has been polished away. In general, the lower the rice polishing ratio, the more of the outer part of the grain is removed, and the more of the white shinpaku (starchy core) at the center remains. Highly polished rice is therefore rice that has been milled to a greater degree, and it is considered to use purer components. Using highly polished rice gives sake a clearer taste and aroma and brings out delicate flavors, which is why it is favored in many premium sakes.
