Kasu kansan ritsu (sake lees conversion ratio)

粕換算率かすかんさんりつ
Kasu kansan ritsu (sake lees conversion ratio) is an indicator used to convert the weight of the lees (sake kasu) produced alongside a sake into the volume of that sake. The ratio is generally based on obtaining about 1.1 kilograms of sake kasu from 1 liter of sake. This makes it possible to gauge the amount of sake kasu, a by-product of the brewing process, and is useful when analyzing raw materials and production efficiency. The kasu conversion ratio is one of the important pieces of data in sake brewing.
