Moisture conditioning (suibun choshitsu)
水分調湿すいぶんちょうしつMoisture conditioning (suibun choshitsu) refers to a method of properly managing the moisture state of polished white rice before washing, in order to effectively adjust the water absorption rate of the steamed rice. In sake brewing, the moisture content of the rice is extremely important. This conditioning process makes it possible to control how much water the rice absorbs and to improve the quality of the steamed rice. Properly adjusted moisture has a positive influence on the fermentation process and the final flavor of the sake, and it also contributes to the texture and aroma of the rice obtained as a result of washing. For this reason, moisture conditioning can be considered one of the important techniques for improving the quality of sake.
