Muko seimai buai (ineffective rice polishing ratio)
無効精米歩合むこうせいまいぶあいMuko seimai buai (ineffective rice polishing ratio) is the value obtained by subtracting the apparent rice polishing ratio (mikake seimai buai) from the true rice polishing ratio (shin seimai buai). In sake brewing, the rice polishing ratio indicates how much of the outer part of the rice has been milled away; the lower the number, the more the rice has been polished. The true rice polishing ratio indicates the degree of polishing after the impurities inside the rice have been removed, while the apparent rice polishing ratio indicates the degree of polishing based on outward appearance. The ineffective rice polishing ratio is therefore an important indicator of the actual state of polishing. Understanding this value can help in evaluating the quality and flavor of sake.
