Nitrate
硝酸塩しょうさんえんTerm: Nitrate
Description: Nitrates are compounds in which a nitrate ion (NO3−) is bound to a metal ion. They are derived mainly from nitrogen and are important chemical components used in both agriculture and industry. Nitrates help plants grow as a nutrient in the soil and are widely used as fertilizer. In sake brewing, however, an excess of nitrates may affect fermentation and the quality of the sake. Managing nitrate levels is therefore important for ensuring the quality of sake.
