Peptidase

ペプチダーゼぺぷちだーぜ
Peptidase is a type of enzyme that breaks down peptides to produce amino acids. This enzyme plays an important role in the sake brewing process. In sake brewing, the starch and proteins contained in rice are broken down to produce sugars and amino acids. Peptidase further breaks down the peptides obtained from the decomposition of proteins, ultimately producing amino acids. Through this process, depth and umami are added to the sake, resulting in a flavorful sake.
