Shikomi tank (fermentation tank)
仕込タンクしこみたんくA shikomi tank (fermentation tank) is a tank used in the sake-making process, mainly for fermenting moromi (fermentation mash). These tanks are usually made of stainless steel or wood, and their shape and size vary with the type and scale of sake being produced. A shikomi tank plays an important role in mixing and fermenting the raw materials: rice, yeast, water, and koji. It must allow control of the moromi's temperature, oxygen supply, and fermentation environment. Because these factors shape the flavor and aroma of the sake, the selection and management of shikomi tanks are very important.
