Substrate

基質きしつ
A substrate is the substance on which an enzyme acts. An enzyme binds to its substrate and promotes a chemical reaction, converting the substrate into a different substance. In sake brewing, for example, the enzyme α-amylase breaks down starch to produce sugars. These sugars are later fermented by yeast and become important components that give sake its alcohol and flavor. In this way, substrates are essential to the sake brewing process through enzymatic reactions.
