About
The umami of the rice brings out the quality of the ingredients. In an effort to draw out 100% of that quality, we insisted on fully handmade production. Once pressed, the sake is bottled immediately and pasteurized using the binkan (bottle-warming) method, a labor-intensive process that stores the fragrant aromas characteristic of daiginjo within the bottle. The result is a mellow sweetness and a well-balanced, full-flavored sake. It is kept in good condition in storage so that its flavor is not compromised.
