About
Eikun Shuzo is a sake brewery in Iriyama, Yui, Shimizu Ward, Shizuoka City. It opened in 1881 (Meiji 14) as Mochizuki Shuzoten. Because that was the year the Japan-Britain commerce treaty was concluded, the brewery named its sake "Eikun", drawing on the image of an outstanding Tokugawa ruler. For brewing water, it uses water from Sakurano Sawa (桜野沢), a renowned spring in the mountains, together with water from an old well discovered within the brewery grounds. All of its products are brewed with Shizuoka yeast and made as sake to accompany meals. The steamed rice, the yeast starter (shubo) and the koji making are all done by hand by the toji (master brewer) and kurabito (brewery workers).
