About
Hirai Shuzojo is a sake brewery in Mitake, Kani District, Gifu Prefecture, founded in 1869 (Meiji 2). It uses spring water from Ganzenjibora (岩仙寺洞) on the hill behind the brewery as its brewing water, and is committed to handcrafted sake made with local rice. Its products include Kamiyonoaji, a Honjozo genshu (undiluted sake) made with Hidahomare rice grown in Gifu, and Miyadaiko, a regular sake well suited to hot (atsukan) and warm (nurukan) serving.
