About
Isaka Shuzoten is a sake brewery in the Satomi district (formerly Satomi Village) of Hitachiota, Ibaraki Prefecture. It was founded in 1818, the first year of the Bunsei era, at the end of the Edo period. The earthen storehouse (dozo) built in 1899 (Meiji 32) is still used as the brewery's main building. In 1996 (Heisei 8), the brewery switched to brewing on its own, and the president, who also serves as toji (master brewer), now makes the sake. Under the motto "sake that tastes good to drink," it brews local sake in a light, dry (tanrei karakuchi) style. Its flagship brand is Hinodetsuru. The brewery makes Junmai, Junmai Ginjo, and Junmai Daiginjo sake, using sake rice such as Miyama Nishiki grown locally in Satomi."},"uncertain_terms":[{"ja":"里美地区","en":"Satomi","note":"Reading of the district (旧里美村) is generally Satomi; please verify."},{"ja":"常陸太田市","en":"Hitachiota","note":"Commonly romanized as Hitachiota; some sources write Hitachi-Ota."}]}
