About

Nakashima Shuzoten, a general partnership based in Wajima, Ishikawa Prefecture, counts the first year of the Meiji era (1867) as its founding. It is a small sake brewery with a production of about 100 koku, and it has always valued sake brewing with local rice, water, and people. Its brands are brewed with the skill of Noto toji (master brewers) and include Noto Suehiro. The brewery produces junmai sake such as Ryo (遼) and Ryo Genshu (undiluted), as well as nigori (cloudy) sake such as Akai Hana (紅い花) and Hana Oboro.

The Nakashima family has been in continuous existence since at least the Kanbun era (1661–1673), but when it began brewing sake is Unknown. Because a sake brewing report from the first year of the Meiji era has survived, the official website gives 1867 (Meiji 1) as the founding year for convenience.
