About

Toriya Shuzo is a sake brewery founded in 1919 (Taisho 8), located at the foot of Mount Bijo (眉丈山) in Nakanoto Town, Kashima District, Ishikawa Prefecture. The brewery uses ultra-soft water from the Mount Bijo range for brewing, and its sake rice comes mainly from Ishikawa Prefecture, starting with rice grown locally. Its distinguishing feature is that every sake is pressed in a wooden vat: the moromi (fermentation mash) is packed into sake bags, which are stacked by hand in a wooden press and pressed slowly over time. Its flagship brand is Ikezuki, and the brewery produces futsushu (regular sake) and junmai sake, as well as Junmai Ginjo sakes such as Hyakumangoku no Shiro and Hitoto (一青).
