Aruten-shu (sake with added brewer's alcohol)

アル添酒あるてんしゅ
Aruten-shu (アル添酒) refers to sake made with added brewer's alcohol (jozo alcohol). Sake is normally fermented from rice, water, yeast, and koji, but in aruten-shu brewer's alcohol is added during the process to adjust flavor and aroma or to reduce costs. Under Japanese law, the amount of alcohol that may be added is limited, and brewing is carried out within those limits. As a result, aruten-shu is often relatively light and easy to drink.
