Awagasa (foam-guard frame)
泡笠あわがさAwagasa is a frame placed on a tank during sake brewing, when the shubo (yeast starter) or moromi (fermentation mash) reaches a high-foam state, to keep the foam from overflowing. It is used especially when fermentation is most active, preventing foam from spilling out while supporting the progress of fermentation. By keeping conditions inside the tank stable, awagasa is one of the important tools for improving the efficiency of sake brewing.
