Awakeshiki (foam-breaking device)
泡消機あわけしきAn awakeshiki (泡消機) is a device used in sake brewing to suppress the foam that forms on the moromi (fermentation mash) and shubo (yeast starter) when foaming is at its peak. Excessive foam produced during fermentation can interfere with the work and affect quality. The awakeshiki uses several rotating metal rods to break down the foam effectively, helping fermentation proceed smoothly. By keeping the foam properly under control, the device is expected to help maintain stable sake quality and good flavor.
