Chakushokuryu (discolored rice kernels)
着色粒ちゃくしょくりゅうChakushokuryu (discolored kernels) are brown rice kernels whose surface is partially or entirely discolored. This discoloration can have various causes, but it is most often the result of disease or insect damage. Because the milling process can remove the affected areas, it is important to observe the kernels directly, in their state before polishing. Such kernels rarely have a positive effect on the quality of sake, so care is needed when sorting the rice.
