Genmai (brown rice)

玄米げんまい
Genmai (brown rice) refers to rice that has been threshed from the rice panicle and had its hulls removed. Unlike white rice, genmai retains its outer layers and germ, so it is nutritionally rich and contains plenty of vitamins and minerals. With growing interest in health, the number of sake made with genmai has been increasing. In sake brewing, using genmai often gives the sake aromas and flavors distinct from those made with white rice, allowing drinkers to enjoy sake with a more individual character.
