Dakitaru (warming vessel for yeast starter)
暖気樽だきたるA dakitaru (also called daki) is a special vessel used in sake brewing to warm the shubo (yeast starter). Hot water can be placed inside the vessel, and by adjusting its temperature, brewers encourage the activity of the shubo. Wooden versions were once common, but in recent years aluminum and stainless steel ones have become the mainstream. This has improved hygiene and temperature control, making it possible to produce a stable shubo.
