Danjikomi (step-wise brewing)

段仕込みだんじこみ
Danjikomi (step-wise brewing) is a method of preparing sake moromi (fermentation mash) in which the ingredients are not added all at once but are divided into several additions. The most widely used form is known as "sandan jikomi" (three-step brewing). In this approach, a portion of the ingredients is added first, another portion is added next, and the remainder is added last, so that fermentation is encouraged in stages. One advantage of danjikomi is that yeast activity tends to remain stable, which can improve the quality of the sake. Because temperature and conditions can be adjusted at each step, it is possible to brew sake with a more delicate, well-balanced flavor. As noted above, danjikomi is one of the key techniques in sake brewing.
