Edaki (pre-fermentation warming of the yeast starter)
前暖気えだきEdaki (前暖気, given in the source text with the reading zendanki) is a warming operation carried out while the shubo (yeast starter) is being developed in sake production. It is performed in the period from after uchise (打瀬) until fukure (膨れ). Edaki is an important step for activating the yeast in the shubo and promoting fermentation. By managing the temperature appropriately during this period, the yeast grows vigorously, which leads to better sake quality. Carrying out edaki well also has a positive influence on the flavor and aroma of the finished sake.
