Alcohol

アルコールあるこーる
Alcohol is a type of organic compound characterized by the presence of a hydroxyl group (-OH) in its molecule. Alcohols with one hydroxyl group are generally called monohydric alcohols, those with two are called dihydric alcohols, and those with three are called trihydric alcohols. Sake contains mainly ethyl alcohol, a monohydric alcohol, which is the principal component of sake and contributes greatly to its flavor and alcohol content. Other monohydric alcohols, such as propyl alcohol, isobutyl alcohol, isoamyl alcohol, and phenethyl alcohol, are also present in sake in trace amounts and help shape its aroma and taste. Sake also contains glycerin, a trihydric alcohol, which helps contribute smoothness and sweetness. In this way, alcohol plays an important role in the flavor and texture of sake.
