Himeii zukuri (high-speed agitation liquefaction method)

姫飯造りひめいいづくり
Himeii zukuri is a modern technique used in sake production, also known as the high-speed agitation and crushing method in a liquefaction tank (液化槽内高速撹拌破砕法). It combines liquefaction brewing with a high-temperature saccharification method to make the fermentation process more efficient and to save labor in production. With himeii zukuri, rice can be liquefied more quickly, and saccharification can proceed in less time than with conventional methods. This greatly reduces the effort and time required for brewing, making it possible to improve productivity while maintaining consistent quality. A similar technique is yuMai zukuri (融米造り), but himeii zukuri is distinguished by its characteristic high-speed agitation.
