Jizake (local sake)
地酒じしゅJizake (地酒) refers to sake produced in a specific region. It is usually brewed using the climate, water quality, and local rice of that area, so it typically reflects the flavors and character of its locale. Jizake is a symbol of each region's culture and traditions, and it is often loved and valued by local people. In the Kagoshima and Miyazaki regions, a sweet sake known as akazake (red sake) is sometimes called jizake in particular, but jizake as a whole encompasses a wide range of styles and flavors from across Japan. A major appeal of jizake is the chance to enjoy the distinctive character of each region.
