Jokan (higher-temperature warmed sake)
上燗じょうかんJokan (上燗; the source text gives the reading as "uwakan") is one way of warming sake (kan), and refers to the higher end of the temperature range for warmed sake. It is generally around 50°C. At this temperature, the aroma of the sake becomes more pronounced and the flavor turns mellower. Umami in particular is emphasized, and the sake pairs well with food, which makes it well suited to the colder months and to enjoying with warm dishes. However, if the temperature is too high, the alcohol aroma can become too strong and the flavor can be spoiled, so it is important to hold the sake at an appropriate temperature.
