Karakuchi (dry)
辛口からくちKarakuchi (dry) is one of the taste profiles of sake. It generally refers to a sake with little sweetness and a crisp, clean drinking character. The expression is often close in meaning to "dry" in wine. The dryness of a karakuchi sake is usually indicated by a positive (+) sake meter value (SMV), and the higher the number, the stronger the impression of dryness.
In a dry sake, acidity, alcohol content, and aroma all interact, and how it is perceived can differ from one drinker to another. In contrast to amakuchi (sweet) sake, dry sake is often characterized by lower sugar content and a clean aftertaste, and it is considered to pair well with Japanese cuisine and small dishes to accompany drinks.
