Kenmaiki (rice-refining machine)
研米機けんまいきA kenmaiki (研米機) is a device used to remove unwanted protein and lipids adhering to the surface of polished white rice, and in many cases the bran on the surface as well. In sake brewing, it is important to grind away the outer part of the rice through rice polishing so that the starch at the center of the grain can be used to the fullest. The kenmaiki is an indispensable tool for making the polishing process more efficient and for refining the rice evenly, in order to obtain better sake rice. This greatly improves the quality of the sake.
