Kikizake (sake tasting)
きき酒ききざけKikizake (also read kikishu) is an evaluation method carried out as part of the sensory assessment of sake. In this process, the taster first observes the sake's color and clarity to judge the quality of its appearance. Next, the taster smells the sake and identifies the various components of its complex aroma. Finally, the taster takes some of the sake into the mouth to check its flavor and evaluate the balance of sweetness, acidity, bitterness, umami, and other elements. By assessing the three elements of color, aroma, and taste together in this way, the quality and characteristics of the sake can be clarified, and it can be graded and quantified. Kikizake is an important skill for understanding sake more deeply, and it is an indispensable process for both enthusiasts and professionals.
