Matsuyama Mii
松山三井まつやまみいMatsuyama Mii is a sake rice developed in Ehime Prefecture. It was originally grown as a table rice, but its compositional characteristics are regarded as comparable to those of sake rice (shuzo koteki mai), and it is considered to have high potential, particularly for sake brewing. A distinctive feature of Matsuyama Mii is that, when the process of limited water absorption is carefully controlled, it can be brewed into sake with a character and flavor close to that of Yamada Nishiki. For this reason, it has grown in popularity among brewers across Japan in recent years. Sake made from Matsuyama Mii is characterized by a gorgeous aroma and a well-defined taste, and it is loved by many sake fans.
