Melting point

融解点ゆうかいてん
The melting point is the temperature at which a solid, when heated, begins to change into a liquid. For many substances, including those found in sake, the melting point depends on the substance's properties and crystal structure. In sake brewing, it is particularly useful for understanding changes in the state of components such as sake rice and yeast. Temperature control is extremely important throughout the sake-making process, and during fermentation in particular, an understanding of melting points helps brewers maintain the temperature conditions best suited to yeast activity.
