Methylene blue staining method

メチレンブルー染色法めちれんぶるーせんしょくほう
The methylene blue staining method is a test used to examine the yeast employed in sake brewing. In this method, a dye called methylene blue stains dead yeast cells blue. The stained yeast cells are observed under a microscope, and the proportion of cells stained blue (the staining rate) is calculated to evaluate the yeast mortality rate. This makes it possible to assess the health of the fermentation and to manage yeast activity, contributing to better brewing quality.
