Miyama Nishiki

美山錦みやまにしき
Miyama Nishiki is a type of sake rice (sakamai) grown widely in Japan, particularly in Nagano Prefecture and the Tohoku region. It was developed in 1978 at the Nagano Prefectural Agricultural Experiment Station, with Hokuriku No. 12 as the female parent and Tohoku No. 25 as the male parent. Because Miyama Nishiki is highly cold-resistant and can be cultivated even in cold regions, it is used in many different areas. The sake it produces is generally light and easy to drink, with a gentle aroma, which makes it well suited to brewing refined, elegant sake. Its production volume ranks next after Yamada Nishiki and Gohyakumangoku, and many sake breweries make use of its characteristics. Miyama Nishiki is one of the sake rice varieties whose popularity has been growing in recent years.
