Monosodium glutamate (MSG)
グルタミン酸ナトリウムぐるたみんさんなとりうむMonosodium glutamate (MSG) is an amino acid compound, specifically the sodium salt of glutamic acid. It gives foods a distinctive umami and is especially valued in Japanese cuisine and fermented foods. In sake production, monosodium glutamate is sometimes used as an additive to enhance umami, and it is mainly used as a seasoning in the production of zojoshu (sake with added brewing alcohol and other ingredients). It enriches the flavor of the sake and makes it easier to drink.
