Zojoshu (volume-increased sake)

増醸酒ぞうじょうしゅ
Zojoshu is sake brewed mainly by the sanbai zojo method (the "triple-volume" brewing method). In this method, miscellaneous yeast is used during production to increase the volume of the original sake up to three times, so that more sake can be produced. Zojoshu is often reasonably priced and has a light aroma and flavor, which makes it popular as a sake to enjoy every day. However, it is said to be somewhat lacking in depth of flavor and aroma compared with Junmai and Honjozo sake.
