Namazake (unpasteurized sake)
生酒なまさけNamazake (unpasteurized sake) is freshly pressed sake that has undergone no heat treatment (pasteurization, or hiire) at any point before shipping. As a result, it is characterized by a fresh taste and aroma, allowing drinkers to enjoy the sake in the state it is in just after the moromi (fermentation mash) is pressed. Namazake requires refrigerated storage in particular, and its flavor may be impaired if it is not kept at an appropriate temperature. It may also contain some carbonation, so it can be enjoyed in a variety of ways, which is part of its appeal. Because of this freshness, it tends to offer a lighter, more refreshing taste, unlike rich or aged sake.
