Niten shikibetsu ho (two-sample discrimination test)
2点識別法にてんしきべつほうThe two-sample discrimination method (niten shikibetsu ho) is a testing technique used to judge which of two types of sake is superior, or whether the two differ. In this method, two sakes, A and B, which have objective criteria such as alcohol content and sugar content, are usually served blind (that is, without the taster knowing which sake is which). The taster perceives the difference between the two sakes presented and evaluates which is stronger or more distinctive. The method is used to understand the evaluation criteria of consumers and experts, and it helps deepen understanding of the quality and characteristics of sake.
