Protease (protein-degrading enzyme)
プロテアーゼぶろてあーぜProtease is a general term for enzymes that break down proteins and peptides, and it plays an important role in sake brewing. During the sake-making process, protease breaks down the proteins contained in rice and produces amino acids and peptides. This promotes fermentation and helps produce sake rich in components that contribute to aroma and umami. Protease also works together with amylase, the enzyme that converts rice starch into sugar, to create a better fermentation environment. In this way, flavorful sake is produced.
