Salt

塩えん
Salt generally refers to a compound formed from an acid and a base through a neutralization reaction, and it exists in many varieties, such as sodium chloride, widely known as table salt. Salt also plays an important role in sake brewing. In particular, salt contributes to the fermentation process and the stability of brewing, and helps support yeast metabolism. In addition, certain salts used in sake making (for example, ammonium phosphate and magnesium sulfate) promote enzyme activity and help fermentation progress. Furthermore, because table salt also affects the flavor and aroma of sake, it must be added in an appropriate balance. To improve the quality of sake, it is important to consider carefully the types of salt and how they are used.
