Base (enki)

塩基えんき
Term: Base (塩基, enki) A base is a substance that releases hydroxide ions (OH⁻) when dissolved in water and shows alkaline properties. Bases play an important role in sake brewing. For example, sodium hydroxide is used when measuring the acidity of sake, which contributes to quality control. Ammonia water (that is, ammonium hydroxide) is used as a neutralizing agent and is employed to adjust pH during the brewing process. In this way, bases are an essential element for maintaining chemical balance in sake making.
