Seiryu (sound whole grains)

整粒せいりゅう
Seiryu (整粒) refers to rice grains that are sound and fully formed in shape, as used in sake production. The term describes rice in its pure grain state, after damaged grains, dead grains, grains of other varieties, and foreign matter have been removed. Seiryu is a basic requirement for brewing high-quality sake, and it receives particular attention at the rice polishing and sorting stages. Using seiryu rice improves the flavor and aroma of the sake and can lead to higher evaluations.
