Shokugoshu (after-dinner drink)

食後酒しょくごしゅ
Shokugoshu refers to sake enjoyed after a meal. It is often served with dessert or a light snack, and a good balance of flavor and aroma is important. Among Western alcoholic drinks, dessert wine and brandy are commonly used for this purpose. In the case of sake, aged sake (koshu) and kijoshu (a sake brewed with sake in place of some of the water) are popular choices as after-dinner drinks. These sakes have sweetness and richness that make the time after a meal more enjoyable. They are therefore a fitting choice for relaxing after dinner.
